Beef and Vegetable Chow Mein Noodles makes 4 generous ‘toddler’ serves
1 tab vegetable oil
500g lean beef mince
1 medium size onion (chopped finely)
2 garlic cloves (crushed)
1 tab curry powder
1 large carrot (finely chopped)
2 celery stalks (sliced thinly)
150g mushrooms (sliced thinly)
1 cup chicken stock
1/3 cup oyster sauce
2 tabs light soy sauce
450g fresh, thin egg noodles
½ cup frozen or fresh peas
½ cup green beans, sliced

Heat oil in wok or large frying pan on medium heat; stir-fry mince, onion and garlic until mince is browned. Add curry powder; continue to fry for one minute or until fragrant. Add carrot, celery and
mushrooms; stir-fry for 2 minutes. Then add stock, sauces and noodles and combine; bring to boil then add peas and beans. Reduce heat immediately and simmer, uncovered, tossing occasionally for about 2 minutes until vegetables are cooked, but crunchy still. Serve, taking care to make sure temperature is not too hot.
